PinTries - easy eggs

Yes, I am actually trying things I see on Pinterest. Boy what a time void that site is right?! :D
Well my focus is this recipe I found involving eggs. I am trying to get my hubby and I to start our day with more than just cold cereal. This Pin I found was awesome. And for some reason the link from Pinterest was not working, but no worries, I will post the Original Recipe on here and then my tweaks:)
You use a muffin tin to do all this!!!

What you need:
- 1 egg per slot
- oil/butter/non stick spray
optional:
- pepper and/or salt
- tomatos
- spinach
- basil
- it's endless really

Preheat Oven to 350 degrees. Assemble your egg creations. Pop in the oven for 15 mins. I do this cause I like to know for sure my eggs are cooked!!

My tweaks: I scramble the eggs before hand, as I am not a big fan of 'runny' eggs. Plus the scrambled version is easier On The Go.

To get them out--I used a butter knife. I etched my way around the sides and gently slid the knife under and lifted them out.

You can put them in the fridge for the week. Heat up in toaster oven or microwave.

  1. went to Baugher's tonight for produce & Bowman's for fresh eggs from a New Windsor farm, so I'm going to be making some of these for in-the-car breakfasts...yay!
